I remembered I had saved some rhubarb in the freezer and discovered black currants and blackberries in there too; and so a day of jam making ensued. I decided to make scones too as I was in a creative mood. Sometimes it is nice to spend the day in the house making things and I much prefer home-made baked goods to anything bought. In my ideal world I would have a day each week making cakes and biscuits and savoury flans and quiches; but it is seldom that I have such a head on me. Anyway, this was nice for a change.

When I make jam I make it in as simple a way as possible which is generally 1lb of fruit to 1lb of sugar and I add some lemon juice to help it set. The recipe for the scones is from the Be-Ro book and is as follows -

8oz Self-raising flour, 2oz butter, pinch salt, 1oz sugar, 1 egg, 3-4floz milk, 2-3 oz raisins or sultanas, mixed spice if desired.

Put the flour and salt and sugar in a mixing bowl and mix together. Add mixed spice if using and then mix in fruit. When all mixed together, make a “well” in the centre of the bowl and add a beaten egg. Stir this to incorporate into the flour. Add the milk a little at a time to mix into a dough. Bring the dough together and then roll out lightly on a floured board. The dough should be about 1” thick. Cut out the scones with a scone cutter or a cookie cutter and place on a greased tray. Brush the top with beaten egg and bake for 15 mins at 200 degrees C or gas 7 until golden brown. Enjoy when cool with butter and jam.

Another way to enjoy this recipe is to leave out the sugar and fruit and add about 3oz grated cheese.
