I made my cake a couple of weeks ago, (recipe below) and now I am putting on the marzipan. Dreary weather brings my mind back to the summer and the last good day we had and here I share the memory of that day. Hope it cheers you up.

Here is my recipe for Christmas Cake :-

3.5lbs of mixed fruit - currants, sultanas, raisins, cherries, mixed peel soaked overnight in enough whiskey to cover the fruit. Then take 1lb soft brown sugar and 1lb butter and mix together to form a cream. Take 6 eggs and gently beat together and gradually add to sugar and butter batter alternating with 1lb plain flour gradually folded into the batter. Mix Nutmeg, Mixed Spice, Clove and Cinnamon powders into the flour to suit your taste. Add 4 ozs chopped almonds and a large tablespoon measure of Molasses or black treacle. Mix well until everything is combined and then add the fruit that has been soaking in the whiskey. Stir well - make a wish. Pour this batter into a 9" square greased and lined cake tin and bake at Gas 1 or 275F or 140C for about 4 and a half hours to 4 and 3/4 hours. After 4 hours check with a skewer . I tend to turn off the oven and just leave the cake there and remove it the next morning. (I always bake last thing at night as the fire is low then) Keep well wrapped up and in a tin and feed with a capful of whiskey every week until you ice it.

A bullaun stone is a stone with a natural bowl within it that holds water. Often found at old monastic sites, they came to be used as baptism fonts to counteract pagan beliefs of the water within being curative.
